The London and south east England chefs - Matt Gillan, Lee Westcott and Marcus Wareing's protégé Mark Froydenlund - go head to head with their fish courses. Lee is hoping his modern plate of mackerel and passion fruit will outclass Matt and Mark's more traditionally inspired salmon dishes.
